Amaranth Greens ( கீரை ) are packed with vitamins and minerals. It’s easy to grow in hotter region. We can harvest these greens faster and as much we want. We have already posted article on how to grow these amarathea greens!
Amaranth fry ( poriyal )
- 🍃Harvest freshly grown amaranth greens.
- 🍃Cut into small pieces.
- 🍃 Add two tsp of cooking oil to a pan 🍳
- 🍃Add mustard, cumin seeds, and dry chili, garlic.
- 🍃Roast it on medium flames for 2 mins
- 🍃Add chopped 🧅 onion Fry for about 5 mins.
- 🍃Add the chopped greens and stir and fry in medium flames for 10 mins.
- 🍃Sprinkle some water if you need ( optional )
- 🍃Add some salt for taste ( use pink Himalayan salt – optional )
- 🍃Serve it in a bowl.
Amarathea Greens gravy ( keerai kootu )
- 🍃Harvest freshly grown amaranth greens.
- 🍃Cut into small pieces.
- 🍃 Add two tsp of cooking oil to the pan 🍳
- 🍃Add mustard, cumin seeds, and dry chili, garlic.
- 🍃Roast it on medium flames for 2 mins.
- 🍃then Add chopped 🧅 onion Fry for about 5 mins.
- 🍃Once the onion turned brown add the chopped greens and stir and fry in medium flames for 2 mins.
- 🍃pour 1 cup of water for 200 grams of greens.
- 🍃Add cooked Dal ( lintel) and sprinkle some salt and cook for about 10-15 mins.
- 🍃Serve it in a bowl.
Amaranth Greens Vada ( keerai வடை )
- 🍃Make the batter for Vada ( check here to know more about making vada batter)
- 🍃Add the chopped greens, Ginger, Garlic.
- 🍃Add chopped onion.
- 🍃Mold it into a semi-circle shape using a plastic cover or any big leaves ( use oil to avoid stickiness )
- 🍃 Add them in hot oil and fry till it turns golden brown.
- 🍃Serve it with sauce or chutney.
Amaranth Greens smoothie🧃
- 🍃Add the half cup of copped greens in juicer
- 🍃Add frozen banana, fresh cream / yogurt
- 🍃Blend it well, add sugar ( optional )
- 🍃Serve chill
Amaranth Green’s fried rice
- 🍃Heat the pan and add 2 tsp of oil.
- 🍃Add ginger-garlic paste and mix it well for 2 mins.
- 🍃then add the chopped onion & garlic and fry for 5-7 mins.
- 🍃Once the onion turned little brown add chopped greens and fry for 3-5 mins.
- 🍃Sprinkle some salt ( as per taste )
- 🍃 Add cooked 🍚 rice and toss and fry for 5 minutes.
- 🍃 Add soya and chili sauce for taste
- 🍳Sprinkle some chopped spring onion, coriander, and turn off the pan.
- 🍃Serve hot with sauce.
